GlucanMos production process consists of several enzymatic extraction steps in which MOS and β-glucans are separated and released from the outer layer of Saccharomyces cerevisiae cell wall.The agglutination of pathogenic bacteria by MOS is the key mechanism of their protective action. MOS bind to lectins (adhesion proteins) on the surface of pathogenic bacteria and prevent them from adhering to the glycosidic patterns of intestinal walls, they can’t colonize or infect the host and remain in the intestinal lumen before being eliminated naturally in feces.
